When I make a meal I like to add a lot of “accessories” to it. Lime, cilantro, cheese… basically I like to make my meals as high maintenance as possible. But who likes a boring meal amiright?
At work this week I was squeezing a lime into my meal and some guy in the office asked, “did you really pack a lime with you to work?” Why yes I did. Did you pack your same boring sandwich? (Totally kidding I didn’t ask that, I just laughed and wondered why packing a lime to work was weird #highmaintenancemeal)
I am just not interested in having a mediocre meal, I feel like that’s just a punishment. And plus, my taste buds deserve more respect than that
So I like to get creative with my meal “accessories” whenever I can and who can argue with eating bomb food? Definitely not this gal!
Lately I have been on a black bean dip kick, and it is a kick I don’t mind being on!
This dip adds such an amazing smokey flavor and texture to any meal. I put it in my burrito bowls (pictured), tacos, on bread with eggs – you name it I’ve probably done it! No matter how you play with your bean dip, I promise it won’t disappoint!
To make this yummy meal accessory:
In a food processor combine
- 1 can or black beans rinsed and drained
- 2-3 garlic cloves
- Handful of cilantro
- 1 1/2 tsp of cumin
- 1 tsp of onion powder
- 1/2 tsp of chipotle chili powder
- Juice from 1 lime
- 1/4 of a jalapeno seeded (can omit if you prefer less spice)
- salt and pepper to taste
